Wine Tourism in the Jerez Region
We didn't choose our room names at random. Each one represents a winemaking term from the Jerez region, one of the most unique wine regions in the world.
The Solera and Criadera System
In Jerez wineries, wine ages through a unique system called solera. The barrels are stacked in rows: those at the bottom (the solera) contain the oldest wine, while those above (the criaderas) feed the lower ones.
When wine is extracted from the solera, it's replenished with wine from the first criadera. And so on. It's a perpetual blending process that can last decades.
The wines that inspire us
- Manzanilla: The wine from Sanlúcar de Barrameda, aged under the flor yeast that gives it its characteristic salty flavor
- Fino: Manzanilla's sibling, but from Jerez or El Puerto
- Oloroso: Without flor, oxidative, with notes of walnut and caramel
- Amontillado: The perfect balance between fino and oloroso
